I Can't Leave Well Enough Alone

I love Thursdays.  It's the only morning we all wake up and have to be somewhere on time.  It motivates me to get my booty in gear.  Kids up, fed, dressed, hair combed, teeth brushed, and out the door for a long morning of gymnastics.  Yes, we're there for back to back classes.  One for Little Man and one for Little Miss.  You'd think I'd dread Thursdays, but it's my favorite weekday.  The kids get in some great exercise and I get some adult time.

While the kids are doing their thing, I do mine.  The first 30 minutes, I get to shoot the breeze with other SAHM's.  The other hour and a half I get tortured by the workout guru, Miranda Burcham. During her workouts, I say very bad things in my head.  After her workouts, I think she hung the moon.  She knows how to whip you into shape.  I do it so I won't look like I did last year on the beach.  Check me out.  I'm the one in the lime green bikini...


However, the size of my bum is not the main subject today.  It's the first 30 minutes of my gabfest.  Some weeks ago, the most precious mommy with the most precious little girls struck up a conversation about couponing and cooking.  Of course my eavesdropping ears perked right up and I suction cupped myself to her.  She had brought up two of my favorite subjects.  Anyway, she was just starting the couponing thing and I was telling her tips I've learned over the last year.  Then she shared with me a new cooking website that she loves...Mel's Kitchen Cafe.

I checked it out.  I liked it.  Of course, good ol' Mel is not my BFF Ree Drummond, but there were some fabulous recipes on her site.  I grabbed one and threw it on my menu.  It was the Oven Baked Chimichangas.  I had every intention following this recipe to a 'T'.  The problem is I got a wild hair earlier in the week and used all my chicken breasts for another recipe.  Oops.  That meant no Oven Baked Chimichangas for moi. Or did it?  I did have ground turkey meat.  Ah yes!  The Los Chimichangas live on (I've been reading way too much Skippyjon Jones)!

So here's what I did, and let me say, they were muy delicioso!
  • I used the exact same recipes as Mel's Kitchen Cafe except I used 1 lb ground turkey and added a 1/2 packet of taco seasoning after the meat was cooked.
  • My chimichangas also took 15 minutes to bake instead of the 5-8 recommended. I wanted mine really crispy.
And that my friends is it.  Maybe one day I'll be able to leave recipes well enough alone, but somehow I severely doubt it.  I'm way too controlling for that ;)

I think it is fun to add your own spin on recipes. And you also cook enough to know what is good (or bad) to add to a meal.

That picture does 2 things to me, it makes me feel sad that I don't wear a bikini because I am smaller than that. And it makes me happy that their confidence levels are so high :-)

You really like to throw those types of pictures in there on us don't you. Like the old guy in the bikini, ew.
