Menu Monday

It feels like Monday, right?  Let's just say it is, and then be pleasantly surprised when Friday rolls around earlier than usual. Plus Menu Tuesday doesn't sound right. 

If you're like the average American, you grilled out for dinner last night.  We enjoyed our share of grilled goodies yesterday.  I hope your weekend was as fun filled as ours.  At the very least, I hope you enjoyed the weather.  I think we spent every waking moment outside from Sunday to Monday. It was great.  I plan on doing the same thing for the remainder of this beautifully forecasted week.   More than likely, we'll eat dinner outside too.  To be exact, this is what we'll be eating...

Tuesday-Spaghetti, Parmesan Knots, Fresh Green Beans
Wednesday-Creamy Chicken and Peppers, Spinach Salad, and Parker Rolls
Thursday-Broccoli and Chicken Casserole and Honey Bread
Friday-BBQ Chicken Quarters, Corn Casserole, Salad
Saturday-Soup and Sandwiches
Sunday-Dinner @ Mom's

I made your cheesy broccoli the other day! It was so delicious!

Not sure if you guys like Lemon Chicken but this was for REAL the best chicken I have made in awhile. I did mine in the skillet. NOT the crockpot.

EASY LEMON CHICKEN
Melt 1 cube butter in fry pan
Layer on 4 chicken breasts or chicken tenders
Sprinkle with 1 pkg. Italian Seasonings Salad Dressing Mix
Add juice of 2 lemons.

Cook until tender. Put the lid on at first, then take off at the end in order to brown and absorb seasonings.

*Can be done in crockpot, cook on high 4-5 hrs or low 6-8 hrs. When finished cooking, take out and shred chicken, and ladle on the juices.*
