Menu Monday...on Tuesday

Helloooooo Summer!  Just when you think we have come through and Oklahoma summer unscathed, it turns to hotter than Hades temps.  HOLY SMOKES!!!  We spent Sunday with our church section and Tulsa Homeless Outreach passing out needs and talking with the homeless in the heat.  After standing on the hot pavement for an hour, I have a burden for those living on the streets or living without A/C.

In the comfort of my own home, I hydrated all day so me and my preggers self would be in tip top shape to serve in the 100+ degree temps.  Once we get out to our meeting location, I see 3...THREE...pregnant women who were living on the streets.  Absolutely heartbreaking.  One woman in particular had no idea how far along she was, but was as big around as I am.  As soon as I began asking questions, she jetted.  I can't get her face, demeanor, and baby out of my mind.  Which leaves me with a burdened heart, and that's not a bad thing.  With a burdened heart, you no longer walk through your own life thinking about yourself and your problems and your issues and your to-do's.  You just can't.  Life just can't go on the same.  You can't look at these faces month after month and NOT think about how you can do your life different so they can know a better life.

These 3 men have stories.  Stories that may shock you.  Dwayne and Garland are actually not homeless now.  They have transitioned to apartment living.  However, their apartments are NOT what you and I would consider acceptable living.  Dwayne often refers to his apartment as the Dungeon.  In my opinion, that is a generous description.  Yep, life cannot go on business as usual anymore.
So here we are on Tuesday and I typically would have a menu posted, but thoughts were elsewhere.  BUT, I have it today.

Menu Monday

It finally hit me.  I am having a baby.  The whole idea of waking up at endless hours of the night and the crying and the sleepless night and the crying and the no sleep thing and the crying...I think you get it.  Well, it all really freaks me out.  We've been down this road before and frankly, I. LOVE. SLEEP.  Giving up nights on end with no rest during the day is a super duper labor of love for me.

But, finally...FINALLY, I am getting excited to snuggle, cuddle, nurse and love on a little 7 lb bundle of miraculous cuteness at all hours.  The newborn pics creeping through my news feed gets me so excited about the new life.  Another opportunity to raise a child to make a difference in this world.  We live a rich life!

In the meantime, I am going to cook.  Life goes on and there's not too much time to ponder the future.  Here's what's getting us through the week nutritionally...

Menu Monday

It's the week we begin school.  Am I really old enough to have a second grader and a Kindergartener???  How is it possible to have kids that old when I'm only 25? 

I am so lying through my teeth.  I'm 25 plus a few more years, but I have a bit of an identity crisis.  I see myself as 25.  Then I see someone who is truly 25 and I cry.  They have no wrinkles...or gray hair...or multiple children dangling from their limbs.  Nope!  They are just young and vibrant and naive and...I just can't talk about this anymore.

Menu Monday

 

This was us.  Last week.  On the beach. Forgetting the days and the time. I want to go back.  Spending time together as a family will never get old.  A full week of waking up, eating breakfast together, going on long bike rides, and hitting the beach the rest of the day makes for a PERFECT day.  

The only thing I would erase would be the 7 lbs I gained over the week.  Yep, SEVEN POUNDS! Total indulgence all week.  Very little concern for what I was consuming.  I am paying for it now.  Today, actually yesterday, we started on strictly clean.  I mean, super strict. I need some major discipline to get me back on track.  

So wanting light and fresh for this hotter than Hades Oklahoma heat, I went searching for some newbie recipes.  Here's what I dug up and what the Torres will be chowing down on this week.

Monday-Roasted Whole Chicken* (half eaten, half shredded for later), Steamed Broccoli, Salad
Tuesday-White Bean Soup with Turkey Sausage and Sweet Potatoes
Wednesday-Power Hummus Bowl** and Berry Salad
Thursday-Seasoned Tilapia, Brown Rice with Roasted Peppers
Friday-Burrito Bowl (use remainder of shredded chicken) with Brown Rice Chips and Salsa
Saturday-Veggie Loaded Spaghetti, Salad
Sunday- Chicken and Veggie Kabobs and Fresh Roasted Green Beans

*use first 5 ingredients only and toss in the crock pot. 
**just check out that Power Hummus Bowl. Bed of spinach, a few sliced purple onions, cucumber, cilantro, shredded chicken, and a big 'ol glob of avocado hummus...YUM!

Menu Monday

Are you ready for some super exciting news that will make you leap right off the chair in which you are sitting?  Well, you are going to get it!  In fact I have two very earth shattering announcements.

#1: The Torreses have decided on a name for Baby Girl #4!!!

Hello?  Are you there?  I know, you passed out from excitement.  And the name is....

Ha!  Not telling.  We're going to attempt to keep this a secret.  Even though we've already forgotten it's a secret, like multiple times, and told at least 10 people the name. 

#2:  I felt Baby Girl #4 move from the inside and outside this weekend. 

Hello?  Are you there?  I know, you passed out from excitement...again.

Exactly what this means for you is I will ask you to awkwardly put you hand on my belly and wait and wait and wait until she moves again so you can feel it too.  It's just the way I was made.  I like sharing.

Moving on.  I have a menu, and let's be honest.  You are more excited about this than my unsuccessful secret keeping and moving baby.

*We sub out a few things in this recipe to keep it clean.  We use coconut oil to 'fry', unsweetened almond milk to beat with the eggs for dipping, unsweetened coconut flakes, and almond flour or coconut flour for coating.  No dipping sauce required.

Menu Monday & A Wedding

Do you ever have those moments where you feel young and vibrant and knocked up and totally cool, only to realized, "DANG!  I'm getting old."

Saturday night Steven and I went to a wedding to celebrate the marriage of a precious young woman I coached while she was in high school.  It was a beautiful wedding, but it sure reminded us we are in an older stage of life.

First off, getting out the door was not young and vibrant.  It was more like chickens running around with their head's cut off. Trying to get three kids out the door for a Grandparent Date all the while making ourselves somewhat presentable for an evening wedding...MADHOUSE!

Double add in a woman trying to figure out what to wear, or at the very least, something that fit and resembled a dress... 

Ohhhhh!  This dress will work. 

NOPE!

What about this one?  It fit last month in Vegas.

NOPE!

Almost resorting to my nicest of yoga pants (and you think I'm kidding), I remembered the bag of maternity clothes passed to me (I gave all my maternity clothes away to a teenager at the Tulsa Homeless Shelter 2 days before I found out I was pregnant).  JACKPOT!!!  I found a dress that fit the bulging midsection. So make-up bag in hand we hopped in Steven's truck and headed to the wedding.

Seeing all the girls I coached in cheerleading, all grown up, starting their careers and families was awesome.  Their stories, their dreams, their passions...so amazing to listen to them all.  But, one thing remained.  Steven and I are so far removed from starting our lives together.

At one point we were dancing with all the other married couples.  When 10 years was called out, there we were...still dancing.  I glanced around and we were surrounded by all these mid-life peeps.  What the heck??? How did we get here?  We're with the oldies!  WAIT!  We are the OLDIES!

So with the wrinkles and aches and oldness, Steven and I celebrated where we are in life now.  And let me tell you!  It's not something we would change one bit.  Three kids and one more (the LAST one) on the way, we have been blessed with a life we could have never earned on our own.  We've been allowed experiences to grow us where we are today.  We have a community of people who support and love us in ways I would have never imagined in our 20's.  We totally look forward to our 40's and beyond.

Old or not I love this man far more than I did the day I married him.  I can only hope he ages along with me. Good thing I have an amazing eye cream!

Menu Monday

I don't mean to brag, but my WHOLE house is clean!  You bring in some major rain and no plans for a weekend and I'll show you two parents who tackle a house together.  Clutter on the counters...gone.  Dirty bathtubs...clean.  Crumbs on the floor...fed to the kids (I kid).  Laundry mountains...washed, folded, and put away.

Man, I used to be so on top of the house stuff.  Then I had three kids, and introduced two nephews, and began a profitable business, and started serving more, and well, a clean house moved to the bottom of the list.

At least for one day, everything is clean.  I am in heaven.

Now to move onto tackling my pregnancy cravings.  Those are OUT. OF. CONTROL.  I am working hard to keep fresh and clean in the front of my day, but as you can see for dinner, it all breaks loose!

Menu Tuesday

It's broken.  Her poor elbow is cracked.  Little Miss suffered the whole weekend with a sling and some Tylenol.  First thing Monday morning we were at a very reputable orthopedic who caught the crack immediately.  Good news...cast is only on for 4 weeks.  Bad news...no water for 4 weeks.  She wasn't eligible for a waterproof cast since it has a bend.  She handled it so well.  Mainly, because she knows this earns her special dates with Grammy.  Grammy made that known about 2.5 seconds after the cast went on her tiny arm.

For right now, we're just learning the art of living with a cast.  The lack of mobility, knocking stuff over, taking baths, and itching the itchies.  All things considered she is doing great!  The part that makes me the most sad is she is just now letting us in on how much pain she experienced over the weekend. 

 

So as life tries to resume to normal, I wanted to leave you with a menu.  I sure hope your week has begun WAY better than ours.  Aye, aye, aye!

Menu Monday

Today is like a Monday, riiiiight???  It feels like Monday over here.  Only it's one day closer to Friday so that makes this day a happy day.  Even though every day is a happy day.  We try to make happy days at least.  Could someone tell the littlest Torres that?  He seems to forget how hard we work to keep happy in this family.

I hope you all had an amazing weekend celebrating Memorial Day.  What a way to take a moment to remember the men and women who have gone before us so we can enjoy a holiday.  For those still serving so we can have daily freedoms.  It's a little overwhelming when you really think about it.  What others have done for me.  It's humbling for sure.

It's the clean version.  No really.  I mean that literally.  We're strictly eating clean this week.  After mini vacay after mini vacay our systems are dying for some whole foods.  Like every color of the rainbow is going in my shake!

This week is my most favorite week.  It's the LAST week of school for Little Man and Little Miss!!!  Sweet, sweet summertime.  Bring on the tan babes, white booties, and scents of sunscreen.  I also purchased a new swimsuit to cover my...booty.  Yes, I bought a skirt.  Not covering the belly, just the backside.  Both grow to proportions of unrealistic value, but at least the stomach is expected to grow.  Plus, I like a little shock factor.  Our recent trip to Great Wolf Lodge proved to be quite interesting...

Is that lady pregnant or does she just like to drink...A LOT???

What can I say?   I like to keep people on their toes ;)

It happened.  THE tooth came out.

 

After thrashing, screaming, and covering her mouth her Daddy finally convinced her to let him have three tries.  The third time worked and that thang didn't even realize it came out.  Daddy's are so great.  If it were up to me, it would still be hanging there.  Hanging there like an old New Kids on the Block song.  You know?  Hanging Tough.

Menu Monday

I don't want to sound like an overachiever or anything, but here I am with a menu.  Heeeeey!  I need a sign...

 

This is so true.  Earlier on Sunday afternoon while getting a pedicure, I decided to write out my menu.  I believed I could, and lookie where that landed me.  So if you see me today, it's okay to give me a 'Well Done Good and Faithful Servant' pat on the back.

Menu Monday

I fully intended to post our shenanigans from Spring Break last week, but one shenanigan after another led me to leaving the computer alone.  Not to mention I'm rocking a 2006 Dell laptop that is still kicking.  Firing this bad boy up takes a least 10 minutes.  It's probably time for a new computer, but I am waiting for this thing to DIE!

So our week last week kicked off with Little Miss' first ever slumber party with my best childhood pal's girls.  It was so much fun to help out with the Spa Night.  I will totally steal this idea for a party in the future!

The next morning we woke the boys early to grab donuts, get Little Miss and head out of town for Branson, MO with friends.  We were quite the lucky ducks to get great weather on Saturday and then watch a beautiful snowfall on Sunday.  Lovely!

 

We even ran into Little Man's friend from school and church.  He was so pumped to ride a ride with him.
 

I'll spare you the rest of our photo dump until later this week.  We had such a great time together during Spring Break it makes it that much more difficult to let them loose at school again.

Menu Monday

If you are sitting at sunny and 75+ degrees, I want to be where you are right now!  I have always been a person to enjoy all seasons, but this year I am ready for Spring.  Winter has overstayed the welcome.  Snow, sleet, rain, thunder, lightening on March 2nd.  Geez.  Time to go.

I'm ready for back porch grilling in my shorts and flip flops while the kids run around like little banshees in swim suits and water spraying everywhere.  I'm ready to wake up and throw on a tank, shorts, and shoes and head out for a run.  None of this put on layer 1, 2, and 3 before heading out.  I'm ready for smaller laundry piles, sunscreen scented kids,  and quiet time out back when the sun comes up.  Totally ready for warm.

Menu Monday

 

Yep, that's our crew bundled up and freezing our tooshies off for the sake of some Christmas spirit.   Don't you love when people snap photos of your family?  You never know what you're going to get.  Bless the lady's heart.  Sorry Chubby Cheekers...you were only halfway documented as being present at The Christmas Train, but we remember how much you loved it!

 

We remember how we could barely get your picture because you were too busy saying, "Choo-choo" at the train to look at Daddy's camera.  In fact, you can see on your sister's face she was d.o.n.e. waiting for you!  Gotta love that girl!  

We had the best night, as always.  In fact, it's no secret we love our church and The Christmas Train is one of the reasons why.  Besides Disney World, it's the second happiest place on Earth.  Everyone is friendly.  Mind you they aren't being paid to be friendly.  Ran on a system of 300 volunteers, everyone is friendly because they WANT to be there.  In this day and age, that is a miracle in itself.

Can You Say, "Sick?": Menu Monday

I love all the seasons.  I love the opportunity to experience them all.  The snow and ice for us, has been welcomed.  All the movies and snuggling and baking and more snuggling and napping and playing has been just what the doctor ordered.  What the doctor didn't order is a big fat stomach ache.

My mind and wants went to comfort foods this week.  Aye, aye, aye.  Pioneer Woman Cinnamon Rolls, oven baked fried chicken, mashed potatoes, peppermint mochas, peanut M&Ms, popcorn, I could go on and on.  My stomach is full of junk and I feel like junk.  Junk that even peppermint and dandelion tea can't take away. 

I'm not one to never indulge.  I like little treats here and there, but when you turn here and there to a full on 48 hour binge...there's a problem!  So here's to better choices this week.  Snow or no snow!

Three cheers for Monday.  No, seriously.  Three cheers.  It's going to be a great week. 

I remember when I was teaching I dreaded Sunday nights because I knew it was going to be one long week of leaving my babies (Little Man and Little Miss) while I worked.  It was heart-wrenching.  When I walked away from my teaching career, I vowed to never dread Sunday evenings again.

Menu Monday

Mark this down folks.  As of yesterday, the Torreses have CHRISTMAS LIGHTS on the house.  It's not even Thanksgiving and the lights are up.  Not only are they up, but Steven turned them ON.  We are those people. 

Really, the reason for Steven getting it done was to take full advantage of the warm weather.  Generally, he waits until the weekend after Thanksgiving.  That weekend is generally in the 20's or 30's and Steven gets on the roof with frozen toes and fingers, snot freezing to his face, and suffers through the entire process.  Not this year.  He was an early bird.  Being the extraordinary wife that I am, I volunteered my time and unraveling strands, filling in missing bulbs, and basically ordering orchestrating the the beauty of it all.

Then I cooked dinner.

Which brings me to today.

Menu Monday

The Torres menu is always finished by Thursdays so I can have time to shop over the weekend for all the ingredients.  It's really a matter of me finding time to type it out on this very blog.  Maybe I need to add an hour to my day.  Totally.  I need 25 hours in my day.  That will do the trick!

So without further ado, the Torres menu for this week...

Slacker Menu Monday

It's Menu Monday Slacker Edition! 

Monday-Creamy Chicken Roll-Ups, Steamed Broccoli, Grapes
Tuesday-Homemade Pizza and Salad
Wednesday-Little Man's Birthday Dinner! 
Thursday-Black Bean Butternut Squash Enchilada Skillet**
Friday-Turkey Burgers, Crispy Potatoes, Raw Peppers
Saturday-Whole Roasted Chicken, Corn Casserole, Green Beans
Sunday-Avocado Salsa Salmon, Grilled Peppers and Onions, Brown Rice*

*An asterisk on the menus will denote a detox friendly meal.  If you are planning on beginning the detox with us in beginning January 2nd, I encourage you to begin printing out these recipes and/or incorporating them into your meals rotations.  This way you are inching your way into some healthful recipes that eliminate highly addictive and allergenic foods.

**This recipe calls for corn tortillas and cheese.  Both must be omitted during the actual detox.  Instead, you may use brown rice pasta tortillas and rice cheese.
