Zucchini Pancakes


Back in Little Miss' picky eating days, I had to sneak in the veggies.  She's so much better after years of serving the same things on her plate, but I have a new issue.  Chubby Cheekers has found his independence.

The baby only wants to feed himself.  Since he isn't even a year (I'm holding on to these last weeks), I can't just hand him a spoon.  Well I guess I could, but the mess!  Oh the mess he would make.  Nevertheless, I have to feed the kid something, and sometimes I don't feel like waging a war over how he's being fed.

For some reason, I just can't fork over a pancake to him without something in it like a fruit or veggie.  He has to have them.  I can only make so many apple cinnamon pancakes before you wonder what else is out there I can shove into a pancake.  Ah, YES!  Zucchini.  Not enough flavor to change the taste, but oh the nutrition.

Without further hesitation, I reintroduce the Zucchini Pancake.  Best wishes on getting those veggies in!  Here is my motto on kids and veggies...Don't give up, get sneaky!  Thankfully Chubby Cheekers is not picky on what he eats.  He's just picky on how he eats.  My little stinker.

Hits and Misses: Pinterest Recipes

A few days ago, I had a few people mention they were 50/50 on the recipes they were making from Pinterest.  Sometimes you just never know.  I have quite a bit of recipes on my Recipes board, and I've made my fair share of them.  I thought I might break it down for you on the hits and misses for our family.  Fortunately (unfortunately for my thighs), most have been hits.

Family Tradition

I think I've mentioned before that every Saturday morning we have a big family breakfast.  By big I mean I actually cook something fresh and serve it hot.  It doesn't involve toast or oatmeal as the main dish.  Unfortunately,  I've been stuck in a breakfast rut, rotating between about 5 menu items.  It works out okay for the patrons (Steven and the kids) since they don't eat the same thing within a month, but after a few years it gets old.

Pinterest must have heard my cries, because I found two of the most delicious recipes my mouth could barely handle.  The first has endless possibilities, but I'll start with the original recipe.

These little nuggets were from heaven.  A huge hit and very easy to make.  I almost kicked myself in the booty for not making them the night before.  I used egg, sausage, bell pepper, onion, and cheddar cheese so there was no reason those items couldn't have sat in the fridge overnight.  That would have left me more room to focus on these babies...

I can't even go into the ooey gooeyness of this recipe without my mouth watering.  They were fairly simple to make, but you really need to make sure you read all the special tips at the end of the post to help you get the best pancakes possible.  There were a few things I changed to this recipe, and I'm fully convinced the cream cheese icing recipe is incorrect.  I followed what Recipe Girl instructed, which was really contradictory to what I know about cream cheese frosting, and it turned out very yellow from a heavy butter content and low cream cheese and powdered sugar amount.  I ended up adding an additional 2oz of cream cheese and about another cup and half of powdered sugar.  The consistency turned out great after that.  If you make these, and you try her icing recipe first, please tell me how it turned out for you.

Now, I gave credit to two separate places for this recipe because I went scrolling through the comments to see if anyone else had difficulties with the icing (no one mentioned anything), and I came across a lady who cited another source as being the orginal recipe.  Apparently the Recipe Girl even left a comment on Big Red Kitchen's post about the cinnamon roll pancake recipe.  Even though they looked different, I wanted to be sure to give both gals credit for pure deliciousness!

I sure hope you try these out because they come with two thumbs up from me.  Actually eight thumbs up if you count all members of our family...or ten thumbs...depending if you count Little Nugget that's growing.

Apple Cinnamon Muffins

The long time controversy between stay at home moms (SAHM) and working moms (WM) is overrated, but today I must declare that being a stay at home mom wins out.  It wins because it's 8:00am and warm Apple Cinnamon Muffins just popped out of the oven.  If I were working, I'd have one shoe on, possibly a bra, and frantically throwing two kids in the car to make it to the sitter and then to school on time.  But that's not happening today.  Today I'm enjoying my warm muffin in my pj's with some creamer and a dash of coffee.Yes, being a SAHM definitely wins out. 

Just in case you are a SAHM, or if you're an ambitious WM, here's a delicious recipe for some warm morning goodness...

Apple Cinnamon Muffins
1-1/2 cup flour (I used whole wheat flour)
1 egg, beaten
3/4 cups sugar
1/2 cups milk
1-3/4 tsp Baking Powder
1/2 tsp salt
1/2 cups vegetable oil
1 cup Unpeeled Apples, chopped
  • Mix all ingredients together.
  • Pour into greased muffin pan
  • Bake @ 350 degrees for 20 minutes.
  • While muffins are baking, mix 1 Tbsp Cinnamon with 1/2 cup sugar (this will be more than plenty) in a small dish.
  • Straight out of the oven spread and even amount of butter on the top of each muffin.  Then sprinkle the cinnamon sugar on the top of each muffin...Enjoy!!!

Sneaky, Sneaky, Sneaky

Alas, I have found yet another way of sneaking those veggies in for Little Miss.
 
Zucchini Cinnamon Pancakes 

Yes I know it sounds completely disgusting, and even though I will tell you they were completely yummy you will still be grossed out.  Totally grossed out.  However, if you are a desperate mama, you too might try the Zucchini Cinnamon Pancakes, and love them as well.  Here's what I did...
  •  To your regular pancake batter add 1/2 cup or more of finely, finely chopped zucchini. 
  • Add 2 tsp of cinnamon
  • Cook pancakes according to package directions, or as you typically do.
Both the kids gave the seal of approval.  Had to be the cinnamon.  I never add cinnamon to pancake batter, unless they are Apple Cinnamon Pancakes (replace zucchini with apple).

Why I Chose Zucchini?
Zucchini have an impressive list of nutrients...fiber, manganese, vitamin C, beta-carotene (vitamin A), potassium, folate, copper, and riboflavin.  Plus it's green.  The only other vegetables she will eat out right that are green happen to be broccoli (steamed with cheese), and green beans.  That's it.  No more.  She's such a stinker, but she's my stinker ;)

Sausage Skillet Breakfast

Ever since Mason was born, our family has a Saturday morning breakfast. After a while, french toast, pancakes, and all kinds of waffles gets a little old. So this recipe got thrown together. It's not hard, and no doubt some of you readers already make something similar to this. If not, add it to your list.

Sausage Skillet Breakfast




6 eggs, beaten
1 lb sausage
1/4 cup diced onion
1/4 cup milk
1 tsp ground mustard
1/4 cup shredded cheddar cheese
Salt and Pepper to taste


  • Mix milk and ground mustard into beaten eggs. Scramble in skillet.
  • Cook sausage until no longer pink. Add in onion. Cook until onion is soft. Drain.
  • Add eggs to sausage mixture.
  • Top with cheddar cheese.
See. It's really simple. Sometimes we add in green pepper, serve over hashbrows, or use green onions instead of onion. The possibilities are endless.

Killer Donuts (literally)

So if you don't already have a recipe on homemade donuts that are sure to clog your arteries, I'm here to help. I first met these donuts when I was in second grade. It was love at first bite. I went home from school and told my mom she had to make more for me. Well, 20 some odd years later I finally made them for my family. It's really pretty simple, oh so tastey, and oh so bad for you. But, you only live once right?

Killer Donuts

1 roll of refrigerated biscuits
a ton of cooking oil
powdered sugar
milk
  • In a deep fryer (I used an electric skillet), heat oil to frying temperature. You need enough oil to cover at least half of the biscuit.
  • While oil is heating, cut a circle out of the center of the biscuit. Cut out circle can be used for donut holes.
  • Place each biscuit in oil. Allow to cook until you see the bottom edges turn golden brown. Flip over, and allow the second side to brown.
  • Remove donuts from oil.
  • While donuts are cooling, Pour about a cup of powdered sugar in a bowl.
  • Slowly stir in milk until you get a thick icing consistency. If it's too runny, simply add more powdered sugar. If it's too thick, add more milk.
  • Dip each donut/donut hole, both side, in icing.
Eat, enjoy, clog your arteries. These aren't called Killer Donuts for nothing!
